Hey Friend,
It was Andy's birthday this last week and we got to celebrate him! He got his favorite blueberry pancakes, a fun movie night at the theater with me, and a guys night. Andy and Charlie are big pancake guys, and it's kinda cute watching them bond over their shared love of a good stack of flapjacks.
It was a good week celebrating the man who invests so much in our family and makes our home happier with his happy presence!

Perfect for healthy holiday snacking—naturally sweetened, packed with protein, and full of cozy gingerbread flavor!
These no-bake gingerbread energy balls taste like gingerbread cookie dough but are made with wholesome ingredients like dates, almond butter, and oats. They're naturally sweetened, packed with fiber and protein, and perfect for meal prep!
Ingredients:
1 cup pitted Medjool dates (about 12-15 dates)
1 cup raw cashews or almonds
1/2 cup almond butter
1 cup rolled oats
2 tbsp maple syrup
1 tbsp molasses
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp allspice
Pinch of salt
Instructions:
If your dates are dry, soak them in warm water for 10 minutes, then drain.
Add cashews or almonds to food processor and pulse until finely ground.
Add dates, almond butter, oats, maple syrup, molasses, and all spices. Process until mixture comes together and is sticky.
Roll mixture into 16-18 balls (about 1 tablespoon each).
Optional: Roll in shredded coconut or crushed graham crackers.
Refrigerate for 30 minutes to firm up.
