“Charlie’s new ride + a frozen watermelon ‘ice cream’!”
Hi friends,
This past week was one for the books—Charlie got his own car! Well… a push car. It has a little handle on the back so we can steer him around, and when we brought it home, his whole face lit up. That smile still shows up every single time we head outside.
We've been soaking in the sunshine with lots of time outdoors, and I’m loving it too. I've squeezed in some quiet walks—sometimes in the morning, sometimes at night (sometimes both!)—and it’s been so refreshing. Those peaceful strolls remind me how beautiful this season is. Honestly, they make me wish summer lasted all year.
If you're in the same rhythm—soaking in the sun but still wanting to keep dinners light and easy—I’ve got a fresh new menu below that’s perfect for these golden days.
Monday:
🌯 Chicken Caesar Wraps + roasted sweet potato wedges
Wednesday:
🥣 Lemon orzo with grilled shrimp + sautéed green beans
Thursday:
🍳 Zucchini & corn frittata + toast + fresh strawberries
Friday:
🥗 BLT pasta salad (with avocado!) + peach slices
Saturday:
🌽 Grilled chicken thighs + corn on the cob + tomato basil salad
Sunday:
🍚 Asian rice bowls with ground turkey, edamame + shredded carrots
🍓 What’s In Season Right Now?
Here’s what’s extra sweet and fresh this month:
Berries: Strawberries, blueberries, raspberries
Melons: Watermelon, cantaloupe, honeydew
Peaches & Nectarines
Cherries
Zucchini, Cucumbers, Tomatoes
Sweet Corn
Bell Peppers & Green Beans
Pick up a few of these at your local farmers market or grocery store for snacks, sides, or a quick fruit bowl!
Quick Summer Snack: Frozen Watermelon “Ice Cream” 🍦
Toss leftover watermelon chunks into the freezer. Once frozen, blend with a splash of coconut milk or yogurt until smooth and creamy. It’s a refreshing treat that tastes like soft-serve but is 100% fruit-based!
Time-Saving Tip:
Pre-chop your veggies when you get home from the store. Bell peppers, cucumbers, onions, and fruit can all be prepped and stored in clear containers for easy grab-and-go use throughout the week. You’ll thank yourself on busy days!
Best,
Cara
