This last weekend was my baby sister's 30th birthday party! Thirty! I can't believe she's hit that milestone—it feels like just yesterday we were kids sharing a room. We had so many of her friends and family come over to play games, eat good food, and devour way too much cake. She really is the best, and it was such a joy to see how loved she is.

The next day, Charlie and I had a special mom-and-son date at Scheels, and let me tell you—if you haven't taken a toddler there, you're missing out! We started with a Mario Kart racing game (Charlie was very serious about his driving), then headed to the jungle gym where we climbed and played together. Then we wandered through the toy aisles, and Charlie's eyes lit up at every football and basketball. He wanted to touch them all! It was one of those simple afternoons that was just so sweet and I will remember. We're definitely going back.

Perfect for holiday snacking—naturally sweetened, packed with protein, and full of cozy gingerbread flavor!

These no-bake gingerbread energy balls taste like gingerbread cookie dough but are made with wholesome ingredients like dates, almond butter, and oats. They're naturally sweetened, packed with fiber and protein, and perfect for meal prep!

Ingredients:

  • 1 cup pitted Medjool dates (about 12-15 dates)

  • 1 cup pecans or cashews

  • 1 cup rolled oats

  • 2 tbsp almond butter or cashew butter

  • 1 tbsp blackstrap molasses

  • 1 tbsp maple syrup

  • 1 ½ tsp ground ginger

  • 1 tsp cinnamon

  • ÂĽ tsp ground cloves

  • ÂĽ tsp allspice

  • Pinch of salt

Instructions:

  1. If your dates are dry, soak them in warm water for 10 minutes, then drain.

  2. Add dates, nuts, and oats to a food processor and pulse until finely ground.

  3. Add almond butter, molasses, maple syrup, and all spices. Process until mixture comes together and is sticky.

  4. Roll mixture into 16-18 balls (about 1 tablespoon each).

  5. Optional: Roll in shredded coconut or crushed graham crackers.

  6. Refrigerate for 30 minutes to firm up.
