Firebros Season + Your 4th of July Meal Plan 🇺🇸
Our family is in the thick of Firebros season—and if you’ve ever had a summer filled with fireworks, late nights, and lots of hustle, you know the kind of busy we’re living in! My husband started Firebros, a fireworks company, nine years ago, and this year we opened our third location in Lennox. It’s a huge milestone, and while it’s been a full week already, we’re soaking it in.
One of my favorite things about this season is how happy people are when they stop by to grab their fireworks. It’s a festive kind of joy that fills the air—kids pointing out their favorite colors, parents grinning as they pick the "big ones." We’re lucky to have a great team helping us run all three locations, and I truly think that’s what makes it all work: awesome people, great attitudes, and a little bit of chaos in the best way.

Featured Recipe: Summer Chicken Pesto Sandwiches
A no-stress dinner idea that feels special but takes almost no effort. Inspired by Half Baked Harvest’s pesto chicken melts, these are perfect for busy evenings:
Ingredients:
Rotisserie chicken or shredded cooked chicken
1/3 cup basil pesto
Sourdough or ciabatta bread
Sliced tomato
Mozzarella slices (or dairy-free cheese if needed)
Optional: arugula or spinach
Instructions:
Mix chicken with pesto.
Layer onto bread with tomato and cheese.
Toast in a skillet or oven until warm and melty.
Add greens if using, and enjoy!
These are also great cold—wrap one up for a picnic!
Weekly Meal Ideas
Here’s a simple plan to keep meals easy:
Monday – Slow cooker BBQ meatballs + corn on the cob + watermelon
Tuesday – Taco night 🌮 (try taco salad bowls for a lighter option)
Wednesday – Turkey burgers + sweet potato fries
Thursday – Chicken pesto sandwiches (above)
Friday – Pizza night (always!) and a salad
Saturday – Grilled chicken + veggie skewers + rice
Sunday – Leftover night or breakfast-for-dinner
Quick Snack or Treat
Red, White and Blue Banana Pops:
Ingredients:
Bananas, cut in half
Greek yogurt or dairy-free yogurt
Blueberries and chopped strawberries
Crushed freeze-dried strawberries or shredded coconut (optional)
Popsicle sticks
Instructions:
Insert popsicle sticks into the cut ends of each banana half.
Dip bananas into yogurt to coat.
Roll or sprinkle with chopped strawberries and blueberries.
Optional: Add crushed freeze-dried strawberries or coconut for extra texture.
Lay on a parchment-lined tray and freeze until firm (about 2 hours).
