Making Healthy, Delicious Meals—Without the Stress

(Serves 4 | Ready in 40 minutes)

A balanced meal with protein, veggies, and healthy carbs—all on one pan!

Ingredients

• 4 boneless, skinless chicken breasts
• 4 cups baby potatoes, halved
• 2 cups carrots, chopped
• 2 zucchinis, sliced
• 3 tbsp olive oil
• 2 tsp garlic powder
• 2 tsp dried oregano
• 1 tsp salt
• ½ tsp black pepper
• 1 lemon, sliced

Instructions

1️⃣ Preheat oven to 400°F.
2️⃣ Toss potatoes, carrots, and zucchini with 1.5 tbsp olive oil, 1 tsp garlic powder, 1 tsp oregano, ½ tsp salt, and ¼ tsp black pepper. Spread onto a baking sheet.
3️⃣ Coat chicken with the remaining olive oil, garlic powder, oregano, salt, and pepper. Place on the sheet with veggies.
4️⃣ Top everything with lemon slices and bake for 35-40 minutes, flipping halfway.
5️⃣ Serve warm and enjoy!
