Before I left Wednesday evening, I stocked their fridge with a meal I knew Julie would love: a Korean-inspired beef bowl. It’s cozy, flavorful, reheats like a dream—and honestly, it’s one of my absolute favorite meals. Like… I could eat it every week and still be excited.

This recipe was inspired by a meal my friend Hannah made for me after I had Charlie. I remember sitting down to eat it and thinking, “Wow, this is exactly what I needed.”

Ingredients:

  • 1 lb ground beef

  • 1/4 cup coconut aminos (or low-sodium soy sauce)

  • 1 tbsp toasted sesame oil

  • 2–3 tbsp brown sugar (or honey)

  • 1 tbsp minced garlic

  • 1 tsp ground ginger

  • 1 tbsp rice vinegar

  • 1/2–3/4 cup shredded carrots (optional – stir into the meat mixture to sneak in more veggies)

  • Cooked white or brown rice

Optional toppings:
Chopped cucumber, green onions, shredded cabbage, sesame seeds, sriracha or chili crisps

Instructions:

  1. In a skillet over medium heat, brown the ground beef and drain excess fat.

  2. Stir in garlic, ginger, coconut aminos, sesame oil, rice vinegar, and brown sugar.

  3. Add shredded carrots with the sauce if using—they’ll soften right into the meat mixture.

  4. Serve over rice and top with whatever you like—crunchy cucumbers, shredded cabbage, green onions, sesame seeds, or a little heat if you’re into that.
