The squirrels in our yard have been BUSY lately! They're apparently stocking up for winter by sampling everything—the wooden swing set, the fence, and of course, my pumpkins. The small ones have mysteriously disappeared, and the big ones have little taste-test nibbles taken out of them. I guess I'm running an unintentional pumpkin buffet! Last time Charlie and I were outside, one particularly bold squirrel kept inching closer to us, clearly hoping for an invitation to join our leaf pile party. Can't blame them for being resourceful little creatures!

Speaking of leaf piles—Charlie and I have been making big piles of leaves to jump in and sit in. We both love the crunchy sounds they make. These simple fall moments with him are the best. This is such a simple yet satisfying dinner! Fluffy baked potatoes loaded with shredded BBQ chicken (I got mine from Aldi—so easy!), melted cheddar cheese, sour cream, and green onions. 💪 Quick Snack/Treat – Protein Rice Crispy Treats

No-bake, high-protein, and perfectly sweet!

These protein-packed rice crispy treats are a game-changer! They taste just like the classic version but with an added protein boost to keep you satisfied. Perfect for a post-workout snack, afternoon pick-me-up, or even a healthier dessert option.

Ingredients:

  • 6 cups crispy rice cereal

  • 1/2 cup vanilla protein powder

  • 4 tablespoons butter

  • 1 (10 oz) bag mini marshmallows

  • 1 teaspoon vanilla extract

  • Optional: 1/2 cup white chocolate chips for drizzling

  • Optional: sprinkles

Instructions:

  1. Line a 9x9-inch pan with parchment paper and set aside.

  2. In a large bowl, mix together the crispy rice cereal and protein powder. Set aside.

  3. In a large pot over low heat, melt the butter. Add the mini marshmallows and stir until completely melted and smooth.

  4. Remove from heat and stir in vanilla extract.

  5. Pour the marshmallow mixture over the cereal mixture and stir quickly until everything is well combined.

  6. Transfer to the prepared pan and gently press down (don't press too hard or they'll be too dense!).

  7. If desired, melt white chocolate chips and drizzle over the top, then add sprinkles.

  8. Let cool for 20-30 minutes before cutting into 9 squares.

  9. Store in an airtight container at room temperature for up to a week.
